Eating breakfast at your desk can seem like a grim option. You can turn that on its head completely with a beautifully layered jar of granola, fresh fruit and yoghurt (we especially love coconut yoghurt). You’ll feel satisfied and nourished and will probably be the envy of your office buddies. We’re enjoying blueberries in our breakfast jars at the moment but use whatever fruit you have on hand. A nice thick yoghurt will help to keep the layers separate.

Ingredients
Mighty Food Kitchen granola (either variety)
Fresh fruit (blueberries, chopped pears, sliced bananas, chopped mango all work well)
Yoghurt - preferably a thick Greek or coconut yoghurt.
You’ll need a jar that holds a volume of 300 – 400 mls.
Instructions
Fill the jar ⅓ full with granola
Top with blueberries and finish with a dollop of yoghurt.
Placing the ingredients in this order keeps the granola crunchy. It will survive the trip to work and be perfectly crunchy when you sit down to eat it.
